For the Chicken:
2 chicken breasts 🍗
1 tbsp olive oil 🫒
1 tsp dried oregano 🌿
1 tsp dried thyme 🌿
1 garlic clove, minced 🧄
Salt & black pepper 🧂
For the Salad:
150g mixed lettuce 🥬
150g cherry tomatoes, halved 🍅
1 cucumber, sliced 🥒
1/2 red onion, thinly sliced 🧅
Fresh dill 🌿
Lemon slices 🍋
For the Creamy Dill Dressing:
150g Greek yogurt 🥣
2 tbsp mayonnaise 🥄
Juice of 1/2 lemon 🍋
2 tbsp fresh dill, chopped 🌿
1 garlic clove, minced 🧄
Salt & pepper 🧂
👩🍳 Instructions:
Marinate chicken with olive oil, oregano, thyme, garlic, salt, and pepper for at least 15 minutes. Grill or pan-sear for 6–7 minutes per side until fully cooked. Slice into strips. Mix yogurt, mayo, lemon juice, dill, garlic, salt, and pepper to make the dressing. On a large platter, arrange lettuce, tomatoes, cucumber, red onion, and lemon slices. Top with grilled chicken and drizzle with dill dressing.
