Instructions

Mix Dry Ingredients
In a large bowl, whisk together flour, sugar, baking powder, and salt until fully combined. Set aside.
Combine Wet Ingredients
In a separate bowl, whisk milk and eggs until smooth. Slowly pour the wet mixture into the dry ingredients, stirring gently until just combined. Add the ¼ cup oil and mix until batter is smooth and lump-free. Let rest 5 minutes.
Heat the Oil
Pour 2 inches of oil into a heavy-bottomed pot or deep skillet. Heat over medium until it reaches 375°F (190°C) on a thermometer—or test by dropping a small bit of batter in: it should sizzle and float to the surface within 5 seconds.
Fry the Bites
