Whipped up this incredible casserole for our holiday gathering and it was an absolute smash hit! 😍 The rich, savory flavors paired perfectly with creamy mashed potatoes and steamed broccoli. 🥔🥦 Everyone couldn’t stop asking for the recipe! Try it—you won’t regret it! 😍

Ingredients:
• 1 ½ lbs. lean ground beef
• 2 cups diced onion
• ½ cup diced bell pepper
• 1 packet taco seasoning
• 1 ½ cups Cheddar cheese, divided
• ½ cup sour cream
• ½ cup mayonnaise
• 2 tbsp Ranch seasoning
• 10 oz Rotel diced tomatoes with green chilies
• 2 cups Bisquick (or your favorite biscuit mix)
• 1 ¼ cups water, divided

Instructions:
1️⃣ Preheat oven to 350°F and spray a 13x9-inch baking pan with non-stick spray.
2️⃣ Brown ground beef in a skillet, drain grease. Add onion, bell pepper, taco seasoning, and ½ cup water. Simmer for 10 minutes.
3️⃣ Mix sour cream, mayo, ½ cup cheese, and Ranch seasoning in a bowl.
4️⃣ Combine Bisquick and ¾ cup water to form a soft dough. Press dough into the pan and bake for 5 minutes.
5️⃣ Spread beef mixture over biscuit dough, followed by Rotel and sour cream mixture. Top with remaining cheese.
6️⃣ Bake for 25-30 minutes until bubbly and golden.

Notes:
• Store leftovers in the fridge for 3 days or freeze for 3 months.
• Quick version: Use refrigerated biscuit or crescent roll dough.
