Warm Roasted Pear and Blue Cheese Salad

Ingredients:
For the roasted pears:
3 ripe but firm pears, halved and cored
2 tablespoons unsalted butter, melted
1 tablespoon honey
1/2 teaspoon ground cinnamon
A pinch of salt
For the salad:
6 cups mixed greens (such as arugula, spinach, and radicchio)
1/2 cup crumbled blue cheese
1/2 cup toasted walnuts, roughly chopped
1/4 cup dried cranberries or pomegranate seeds (optional)
For the dressing:
3 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
Salt and pepper to taste
Directions:
Roast the pears:
Preheat your oven to 375°F (190°C).
Place the pear halves in a baking dish, cut side up.
In a small bowl, mix together the melted butter, honey, cinnamon, and a pinch of salt. Brush the mixture over the pears.
Roast the pears in the preheated oven for 20-25 minutes, or until they are tender and lightly caramelized. Remove from the oven and let them cool slightly.
Prepare the dressing:
In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper until well combined.
Assemble the salad:
In a large salad bowl, combine the mixed greens, blue cheese, toasted walnuts, and dried cranberries or pomegranate seeds if using.
