Ingredients:

2 medium zucchinis, grated
1 cup fresh spinach, chopped
1/2 cup crumbled feta cheese
1/4 cup all-purpose flour (or almond flour for gluten-free)
2 large eggs
2 garlic cloves, minced
1/4 tsp ground black pepper
1/4 tsp salt
2 tbsp olive oil (for frying)

For the Garlic Tzatziki:

1 cup Greek yogurt
1 garlic clove, minced
1/2 cucumber, grated and drained
1 tbsp fresh dill, chopped
1 tsp olive oil
Salt and pepper to taste

Instructions:

Prepare the Tzatziki:

In a bowl, mix Greek yogurt, minced garlic, grated cucumber (drained to remove excess water), dill, olive oil, salt, and pepper. Cover and refrigerate until ready to serve.

Prepare the Fritter Mixture:

Place grated zucchini in a clean kitchen towel and squeeze out as much water as possible.
