Healing Ginger and Garlic Broth with Noodles
Ingredients:
- 6 cups vegetable broth
- 2-inch piece of fresh ginger, thinly sliced
- 4 garlic cloves, smashed
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon chili oil (optional)
- 200g rice noodles or udon noodles
- 1 cup bok choy, chopped
- 1 cup shiitake mushrooms, sliced
- 2 green onions, finely chopped
- Salt to taste
- Fresh cilantro for garnish
Directions:
1. In a large pot, bring vegetable broth to a simmer over medium heat.
2. Add ginger slices and smashed garlic cloves. Let simmer for 10 minutes.
3. Stir in soy sauce and sesame oil. Taste and adjust seasoning with salt.
4. Cook noodles according to package instructions and set aside.
5. Add mushrooms and bok choy to the broth. Simmer until tender, about 5 minutes.
6. Divide cooked noodles into bowls and ladle hot broth with vegetables over them.
7. Top with green onions and fresh cilantro. Drizzle with chili oil if desired.
