Ingredients:
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/4 cups unsalted butter, room temperature
2 cups granulated sugar
4 large eggs, room temperature
1 teaspoon vanilla extract
1 cup diced fresh mango, drained
1 cup whole milk
1 cup white chocolate chips
1 cup heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla extract for frosting
1 1/2 cups white chocolate, melted for frosting
1/2 cup toasted coconut flakes optional, for garnish
Fresh mango slices optional, for garnish

Instructions:

Preheat your oven to 350F (175C). Grease and flour four 8-inch round cake pans.
In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
In a large bowl, beat the unsalted butter and granulated sugar until light and fluffy, about 3-4 minutes. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Gradually add the flour mixture to the butter mixture in three parts, alternating with the whole milk. Begin and end with the flour mixture. Beat until just combined.
Gently fold in the diced fresh mango and white chocolate chips into the batter.
Divide the batter evenly among the prepared cake pans and smooth the tops with a spatula.
Bake the cakes for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow them to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
In a separate bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Carefully fold in the melted white chocolate until the frosting is well incorporated.
Place the first cake layer on a serving plate and spread a generous amount of frosting on top. Repeat with the remaining layers, frosting the top and sides of the cake.
Garnish the cake with toasted coconut flakes and fresh mango slices for an extra tropical touch, if desired.
