Comforting British Vegan Rolls 🥧🌿✨
Ingredients:
- 1 sheet vegan puff pastry
- 1 cup cooked lentils
- 1/2 cup breadcrumbs
- 1/4 cup walnuts, finely chopped
- 1 onion, finely diced
- 1 tsp dried sage
- 1 tsp thyme
- 1 tbsp soy sauce
- 1 tbsp tomato paste
- 2 tbsp plant-based milk (for brushing)
Directions:
1. Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
2. Heat a skillet and sauté the onion until softened. Combine lentils, breadcrumbs, walnuts, sage, thyme, soy sauce, and tomato paste in a bowl. Mix well.
3. Roll out the puff pastry and cut it into 4 rectangles. Place the filling in the center of each rectangle.
4. Fold the pastry over the filling, sealing the edges. Place seam-side down on the baking sheet.
5. Brush the rolls with plant-based milk and bake for 20–25 minutes until golden.
6. Serve warm as a snack or side dish.
