Pineapple Heaven Cheesecake 🍍🍰
Ingredients:
1 1/2 cups graham cracker crumbs
1/2 cup melted butter
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
1 cup crushed pineapple, drained
1 cup pineapple chunks
1/2 cup pineapple juice
1 tbsp cornstarch
1/2 cup heavy cream
Instructions:
Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
Combine graham cracker crumbs and melted butter. Press mixture into the bottom of the pan.
Beat cream cheese and sugar until smooth. Mix in vanilla extract.
Add eggs one at a time, beating well after each addition.
Fold in crushed pineapple. Pour batter over the crust and smooth the top.
Bake for 55-60 minutes or until the center is set. Let cool completely before refrigerating for at least 4 hours.
In a small saucepan, combine pineapple chunks, pineapple juice, and cornstarch. Cook over medium heat until thickened, about 5 minutes. Let cool.
Whip heavy cream until stiff peaks form. Spread over the chilled cheesecake.
Top with cooled pineapple sauce before serving.
Notes:
For a tropical twist, garnish with toasted coconut flakes.
