The ultimate comfort food mashup! A hearty meatloaf base topped with creamy loaded mashed potatoes and melty cheese — every bite is pure coziness.
🍽 Ingredients:
For the Meatloaf Layer:
1 1/2 lbs ground beef
1/2 cup breadcrumbs
1/3 cup milk
1 large egg
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
For the Loaded Potato Layer:
4 cups mashed potatoes (homemade or instant)
1 cup shredded cheddar cheese
1/2 cup cooked bacon bits
1/4 cup chopped green onions
2 tablespoons sour cream
1/4 teaspoon black pepper
Topping:
1/2 cup additional shredded cheddar cheese
Extra bacon bits and green onions for garnish
👩🍳 Directions:
Preheat oven to 375°F (190°C). Lightly grease a 9x13" baking dish.
Make the meatloaf base: In a large bowl, mix ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper until well combined. Press evenly into the bottom of the baking dish.
Bake meatloaf: Bake uncovered for 20 minutes. Drain any excess grease carefully.
Prepare potato layer: In another bowl, stir mashed potatoes with cheese, bacon bits, green onions, sour cream, and pepper.
Layer the casserole: Spread the loaded mashed potatoes evenly over the partially baked meatloaf. Sprinkle the top with extra shredded cheddar.
Bake again: Return to oven and bake for an additional 15–20 minutes, until cheese is melted and bubbly.
Garnish: Sprinkle with extra bacon bits and green onions before serving!
