Ingredients (Serves 2)
🐔 Blackened Chicken
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tbsp blackened seasoning (store-bought or homemade)
Salt & freshly cracked black pepper to taste
🥬 Creamy Cheese Collard Greens
1 tbsp olive oil
2 cloves garlic, minced 🧄
1 bunch collard greens (about 1 lb), stems removed and chopped
½ cup chicken broth
¼ cup heavy cream
½ cup shredded cheddar cheese 🧀 (or a blend of cheddar and Monterey Jack)
Salt & freshly cracked black pepper to taste

2 medium Yukon Gold potatoes, peeled and cubed
3 cloves garlic, minced
2 tbsp butter 🧈
¼ cup milk or heavy cream
2 tbsp grated Parmesan cheese 🧀 (optional)
Salt & freshly cracked black pepper to taste

Instructions
1. Prepare the Garlic Mashed Potatoes
Place cubed potatoes and minced garlic in a saucepan. Cover with cold water and bring to a boil.
Reduce heat and simmer until potatoes are very tender, about 15-20 minutes.
Drain well and return potatoes and garlic to the saucepan.
Add butter and mash until smooth. Stir in milk or heavy cream and Parmesan cheese (if using). Season with salt and pepper. Keep warm.
2. Cook the Collard Greens
Heat olive oil in a large skillet or pot over medium heat. Add minced garlic and cook until fragrant, about 30 seconds.
Add chopped collard greens and chicken broth. Cover and cook for 10-15 minutes, or until the greens are tender.
Stir in heavy cream and shredded cheese. Cook, stirring occasionally, until the cheese is melted and the sauce is creamy. Season with salt and pepper.
3. Blacken the Chicken
Pat the chicken breasts dry and season generously on both sides with blackened seasoning, salt, and pepper.
Heat olive oil in a skillet over medium-high heat until it's shimmering.
Add the chicken breasts and cook for 5-7 minutes per side, or until cooked through and nicely blackened on the outside. An internal temperature of 165°F (74°C) should be reached.
4. Plate and Serve
On each plate, spoon a generous portion of the creamy cheese collard greens.
Carefully place a blackened chicken breast on top of the collard greens, allowing the melted cheese to crown the chicken beautifully.
