Ingredients:

For the Cake:

2 ½ cups all-purpose flour

2 ½ tsp baking powder

½ tsp salt

1 cup unsalted butter, softened

1 ¾ cups granulated sugar

4 large eggs

1 tbsp lemon zest

¼ cup lemon juice

1 tsp vanilla extract

1 cup buttermilk

For the Lemon Filling:

½ cup lemon juice

1 tbsp lemon zest

½ cup granulated sugar

2 large eggs

2 tbsp cornstarch

3 tbsp unsalted butter

For the Lemon Butter Frosting:

1 cup unsalted butter, softened

3 cups powdered sugar

2 tbsp lemon juice

1 tbsp lemon zest

Pinch of salt

Instructions:

Make the Cake:
Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans. In a bowl, whisk together flour, baking powder, and salt. In another large bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, then mix in lemon zest, juice, and vanilla. Alternate adding the dry ingredients and buttermilk, beginning and ending with flour. Divide batter between pans and bake for 25-30 minutes, or until a toothpick comes out clean. Let cakes cool completely.

Prepare the Lemon Filling:
In a saucepan over medium heat, whisk together lemon juice, zest, sugar, eggs, and cornstarch. Stir constantly until the mixture thickens, about 5-7 minutes. Remove from heat and stir in butter. Cool before using.

Make the Frosting:
In a mixing bowl, beat butter until fluffy. Add powdered sugar gradually, then lemon juice, zest, and a pinch of salt. Beat until smooth and creamy.

Assemble the Cake:
Place one cake layer on a serving plate. Spread the lemon filling over the top. Add the second cake layer and frost the entire cake with lemon butter frosting.
