Ingredients:
• 250 g spaghetti
• 2–3 small zucchinis, thinly sliced
• 1/2 cup Provolone del Monaco (or Parmesan), grated
• 2 cloves garlic, minced
• Olive oil for frying
• Salt & pepper
• Fresh basil leaves
Instructions:
1. 🍳 Fry zucchini slices in olive oil until golden, drain on paper towels.
2. 🍝 Cook spaghetti until al dente, reserve some pasta water.
3. 🧄 In a pan, sauté garlic, add fried zucchini, then toss in pasta.
4. 🧀 Add cheese, pasta water, and stir vigorously to create a creamy sauce. Garnish with basil!
