Cheesy Meatloaf
Ingredients:
For the Meatloaf:
1 1/2 lbs ground beef (80/20 is ideal for flavor)
1/2 cup breadcrumbs (or crushed crackers)
1/2 cup milk
1 egg
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
1/2 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
For the Topping:
1/2 cup marinara sauce (or your favorite tomato-based sauce)
1/2 cup shredded mozzarella cheese (for topping)
For Garnish:
Fresh parsley, chopped (optional)
Instructions:
Prepare the Meatloaf Mixture:
Preheat the oven to 350°F (175°C).
In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, salt, pepper, oregano, and both cheeses. Mix gently until all ingredients are well combined.
Form the Meatloaf:
Transfer the meat mixture into a loaf pan, pressing it down gently to shape the loaf. Alternatively, you can shape the meatloaf by hand and place it on a baking sheet lined with parchment paper.
Bake the Meatloaf:
Place the meatloaf in the oven and bake for about 45 minutes.
Add the Sauce and Cheese:
After 45 minutes, remove the meatloaf from the oven and spread marinara sauce evenly over the top.
Sprinkle the shredded mozzarella cheese over the sauce.
Finish Baking:
Return the meatloaf to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the meatloaf reaches an internal temperature of 160°F (71°C).
Serve:
Let the meatloaf rest for about 10 minutes before slicing. Garnish with chopped parsley if desired.
Serve with your favorite sides, like mashed potatoes, pasta, or a fresh salad.
