Spiced Salmon with Garlic Green Bean Pasta
Flavorful Spiced Salmon with Garlicky Green Bean Pasta Delight
Ingredients:
2 salmon fillets (about 6 oz each)
2 tablespoons olive oil
1 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
Salt and black pepper to taste
250g spaghetti or linguine
200g green beans, trimmed and cut in half
3 cloves garlic, minced
2 tablespoons olive oil (for pasta)
Juice of 1/2 lemon
Fresh parsley, chopped, for garnish
Instructions:
Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper.
Season the salmon: In a small bowl, mix paprika, cumin, chili powder, garlic powder, salt, and pepper. Rub the spice mixture evenly over the salmon fillets. Drizzle with olive oil and place them on the prepared baking tray.
Roast the salmon: Bake the salmon for 12-15 minutes, or until it is cooked through and flakes easily with a fork.
Cook the pasta: Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions. In the last 3 minutes of cooking, add the green beans to the pot. Drain the pasta and beans together, reserving 1/2 cup of pasta water.
Prepare the garlic sauce: In a large skillet, heat 2 tablespoons olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add the drained pasta and green beans to the skillet, tossing well to coat. Add a splash of the reserved pasta water if needed to loosen the sauce. Squeeze fresh lemon juice over the pasta and toss again.
Serve: Plate the garlic green bean pasta and top each portion with a spiced salmon fillet. Garnish with chopped parsley and serve hot.
