๐ Sour Cream Chicken Enchilada Casserole ๐ฏ๐ง

2 cups cooked, shredded chicken ๐
1 can (10 oz) green enchilada sauce ๐ถ๏ธ
1 cup sour cream ๐ฅฃ
1 can (4 oz) diced green chiles ๐ฟ
2 cups shredded Monterey Jack cheese ๐ง
8 small flour tortillas ๐ฏ
1/2 teaspoon garlic powder ๐ง
1/2 teaspoon onion powder ๐ง
Salt and pepper, to taste ๐ง
Fresh cilantro, chopped (optional, for garnish) ๐ฟ
๐ฉโ๐ณ Instructions:
Step 1: Preheat the Oven
Preheat your oven to 350ยฐF (175ยฐC). Lightly grease a 9ร13-inch baking dish.
Step 2: Prepare the Filling
In a large mixing bowl, combine the shredded chicken, green enchilada sauce, sour cream, diced green chiles, garlic powder, onion powder, salt, and pepper. Stir until everything is well blended.
Step 3: Layer the Casserole
Place 4 flour tortillas in the bottom of the prepared baking dish to form an even layer.
Spread half of the chicken mixture over the tortillas.
Sprinkle 1 cup of shredded Monterey Jack cheese on top.
Step 4: Repeat the Layers
Add another layer with the remaining 4 tortillas.
Top with the rest of the chicken mixture and finish with the remaining 1 cup of cheese.
Step 5: Bake
Bake in the preheated oven for 25โ30 minutes, or until the cheese is fully melted and bubbly.
Step 6: Garnish and Serve
Remove from oven and let sit for a few minutes. Garnish with fresh chopped cilantro (if using).
Slice and serve warm!
