Oat and Chia Bread
Ingredients:
2 cups rolled oats (use gluten-free oats if preferred)
3 tablespoons chia seeds
1 teaspoon baking powder
½ teaspoon salt
2 eggs
1 cup water or plant-based milk
2 tablespoons olive oil or melted coconut oil
Optional: sunflower seeds, pumpkin seeds, or nuts for topping
Directions:
1. Preheat the oven to 180°C (350°F). Grease or line a loaf pan with parchment paper.
2. In a large bowl, mix the rolled oats, chia seeds, baking powder, and salt.
3. In a separate small bowl, combine the water with the chia seeds and let them sit for 5–10 minutes until they form a gel-like consistency.
4. In another bowl, beat the eggs and add the olive oil or melted coconut oil.
5. Pour the egg mixture and the chia gel into the dry ingredients, stirring until you get a smooth and uniform batter. If the mixture feels too dry, add a bit more water or plant-based milk.
6. Transfer the batter to the prepared loaf pan, spreading it evenly. Sprinkle sunflower seeds, pumpkin seeds, or nuts on top if desired.
7. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
8. Remove from the oven and let the bread cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
9. Slice and enjoy.
