Grilled Pork Chop with Mashed Potatoes and Broccoli
Ingredients:
For the Grilled Pork Chop:
2 bone-in pork chops (about 1 inch thick)
2 tbsp olive oil
2 cloves garlic, minced
1 tbsp fresh rosemary or thyme (or 1 tsp dried)
1 tbsp soy sauce (optional for extra flavor)
1 tsp salt
1 tsp black pepper
1 tbsp butter (for finishing)
1 lemon (for garnish)
1/4 cup chicken broth or apple juice (for the sauce)
For the Mashed Potatoes:
4 medium potatoes, peeled and cut into cubes
2 tbsp butter
1/4 cup milk (or more for desired consistency)
Salt and pepper to taste
For the Broccoli:
1 bunch of broccoli, cut into florets
1 tbsp olive oil
Salt and pepper to taste
Lemon zest or juice (optional for extra freshness)
Instructions:
1. Grilled Pork Chop:
Marinate the pork chops: In a bowl, mix the olive oil, garlic, rosemary/thyme, soy sauce (if using), salt, and pepper. Coat the pork chops in this marinade and let them sit for 20-30 minutes to absorb the flavors.
Preheat your grill or grill pan: Heat it to medium-high.
Grill the pork chops: Place the pork chops on the grill and cook for 5-7 minutes per side, or until they reach an internal temperature of 145°F (63°C) for medium doneness.
Make the sauce: While the pork chops are resting, use the leftover juices in the grill pan (or skillet) and add the chicken broth/apple juice. Scrape up any bits from the bottom of the pan to create a sauce. Stir in butter for a glossy finish. Simmer for 2-3 minutes.
Serve: Drizzle the sauce over the grilled pork chop and garnish with lemon wedges.

Cook the potatoes: In a large pot, boil the potatoes in salted water for about 10-15 minutes until tender when pierced with a fork.
