Banana Pudding Cupcakes
Ingredients
For the cupcakes:
1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup mashed ripe bananas (about 1 medium banana)
½ cup buttermilk
For the banana pudding filling:
1 package (3.4 oz) instant banana pudding mix
1 ½ cups cold milk
For the frosting:
1 ½ cups heavy whipping cream
¼ cup powdered sugar
1 tsp vanilla extract
For garnish:
Caramel drizzle
Vanilla wafers
Instructions
1. Make the cupcakes
Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
Whisk together flour, baking powder, baking soda, and salt. In a separate bowl, beat butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla and mashed banana.
Alternate adding dry ingredients and buttermilk, mixing until just combined. Fill cupcake liners ⅔ full and bake for 18-20 minutes. Let cool completely.
2. Prepare the banana pudding
Whisk the pudding mix with cold milk until smooth. Chill for 10 minutes to thicken.
3. Make the frosting
Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
4. Assemble the cupcakes
Use a piping tip or spoon to hollow out the center of each cupcake. Fill with banana pudding. Pipe whipped cream frosting on top. Drizzle with caramel and top with a vanilla wafer.
