Cookies and Cream Cupcakes
Ingredients:
For the Cupcakes:
1 cup all-purpose flour
½ cup unsweetened cocoa powder
1 tsp baking soda
½ tsp salt
½ cup unsalted butter, softened
¾ cup sugar
1 large egg
1 tsp vanilla extract
½ cup buttermilk
½ cup hot water or coffee
For the Cookies & Cream Filling:
1 cup heavy cream
¼ cup powdered sugar
8 crushed Oreo cookies
For the Frosting:
1 cup unsalted butter, softened
3 cups powdered sugar
2 tbsp heavy cream
1 tsp vanilla extract
½ cup crushed Oreos
For Topping:
Whole Oreo cookies
Chocolate sauce
Instructions:
1. Make the Cupcakes:
Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
In a separate bowl, beat butter and sugar until fluffy. Add the egg and vanilla extract.
Alternate adding the dry ingredients and buttermilk, mixing until just combined. Stir in hot water or coffee.
Fill cupcake liners ⅔ full and bake for 18-20 minutes. Let cool.
2. Make the Cookies & Cream Filling:
Beat heavy cream and powdered sugar until soft peaks form. Fold in crushed Oreos.
3. Make the Frosting:
Beat butter until fluffy, then gradually add powdered sugar. Add heavy cream and vanilla, then mix in crushed Oreos.
4. Assemble the Cupcakes:
Cut out the center of each cupcake and fill with cookies & cream filling.
Pipe frosting on top, drizzle with chocolate sauce, and garnish with an Oreo cookie.
