Kashata (East African Coconut Candy)
Kashata is a sweet treat popular in East Africa, made from coconut, sugar, and spices, offering a delightful combination of flavors and textures.
Ingredients:
1 cup grated coconut (fresh or desiccated)
1 cup sugar
1/2 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1/4 cup water
Method:
In a heavy-bottomed pan, combine sugar and water. Cook over medium heat, stirring until the sugar dissolves and the mixture begins to boil.
Add grated coconut, cardamom, and cinnamon to the sugar syrup. Stir continuously until the mixture thickens and starts to pull away from the sides of the pan.
Pour the mixture onto a greased tray or parchment paper. Flatten with a spatula to about 1/2-inch thickness.
