Ingredients
For the Chicken:
400g (14 oz) chicken breast or thighs, cubed 🍗
1 tbsp olive oil 🫒
½ tsp salt 🧂
½ tsp black pepper 🌿
½ tsp paprika 🌶
½ tsp garlic powder 🧄
For the Vegetables:
400g (14 oz) potatoes, diced 🥔
2 carrots, sliced 🥕
1 red bell pepper, diced 🌶
1 small onion, diced 🧅
1 head of broccoli, cut into florets 🥦
2 tbsp olive oil 🫒
½ tsp salt & pepper 🧂
½ tsp oregano or thyme 🌿
Instructions
Sear the Chicken: Heat olive oil in a large skillet and cook the seasoned chicken for 5-7 minutes until golden brown. Remove and set aside.
Cook the Potatoes: In the same skillet, add 1 tbsp olive oil and cook the potatoes over medium heat for 10 minutes until slightly crispy.
Add the Vegetables: Stir in carrots, bell pepper, onion, and broccoli. Season with salt, pepper, and oregano. Cook for another 5 minutes, stirring occasionally.
Combine Everything: Return the chicken to the pan, mix well, and let it all cook together for 5 more minutes.
