Strawberry Bread
Ingredients:
- 1 cup fresh strawberries, chopped
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream or Greek yogurt
- Optional: 1/2 cup chopped nuts or white chocolate chips
Instructions:
1. Preheat oven: to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
2. Prepare strawberries: Gently toss chopped strawberries with a tablespoon of flour to prevent sinking.
3. Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, and salt.
4. Cream wet ingredients: In a large bowl, combine melted butter, sugar, eggs, and vanilla. Mix until well blended.
5. Combine: Stir in sour cream or Greek yogurt until smooth. Add dry ingredients and mix just until combined. Fold in strawberries (and nuts or chocolate chips if using).
6. Bake: Pour batter into prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
7. Cool: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
