Creamy Chicken Vegetable Soup (Large Batch)
Ingredients:
4 lbs cooked chicken, chopped
8 cups mixed vegetables (carrots, peas, green beans, corn, celery, onions)
6 large potatoes, diced
1 cup butter
1 cup flour
2 gallons chicken broth
2 quarts heavy cream or milk
Salt, pepper, garlic powder, onion powder to taste
Optional: parsley, thyme, or poultry seasoning
Instructions:
Prepare Roux: In a large pot, melt butter. Stir in flour and cook for 2–3 minutes.
Add Liquids: Slowly whisk in chicken broth, then cream. Simmer until slightly thickened.
Add Veggies & Potatoes: Add diced potatoes and vegetables. Simmer until tender (20–30 min).
Add Chicken & Seasonings: Stir in cooked chicken and season to taste.
Simmer: Cook on low heat for another 15–20 minutes, stirring occasionally.
