8 oz cream cheese, softened

1 teaspoon vanilla extract
2 tablespoons heavy cream (adjust for desired texture)

1. Preheat the Oven
Preheat your oven to 350°F (175°C).
Grease and line two 8-inch round cake pans with parchment paper.
2. Make the Batter
In a large bowl, whisk together almond flour, cocoa powder, baking powder, and salt.
In another bowl, beat together the melted butter, eggs, erythritol, vanilla, sour cream, and vinegar until smooth.
Add the dry ingredients to the wet mixture and stir until just combined.
If using, mix in your red food coloring until you reach your desired shade.
3. Bake the Cake
Divide the batter evenly between the two pans.
Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
Let cool completely before frosting.
4. Make the Frosting
Beat the cream cheese and butter together until fluffy.
Add the powdered sweetener, vanilla, and heavy cream. Beat again until smooth and creamy.
5. Assemble the Cake
Place one cake layer on a plate, spread a generous layer of frosting on top, then place the second layer over it.
Frost the top and sides of the cake completely.
For decoration, crumble a small piece of cake (or a corner) and sprinkle the crumbs around the top edge and sides like in your photo.
