π Pumpkin Cream Cheese French Toast Bites π―
Ingredients
Pumpkin-Cream Cheese Filling
60 g (β 2 oz) plain cream cheese (or plant-based alternative)
2 tbsp pure pumpkin puree
1 tbsp sweetener (e.g. honey, maple syrup, coconut sugar)
Β½ tsp pumpkin pie spice (or blend of cinnamon, nutmeg, ginger, and allspice)
French Toast Bites
6 slices bread (your choice β regular, gluten-free, etc.)
1/3 cup milk (dairy or non-dairy)
1 large egg (or flax egg substitute)
2 tbsp pumpkin puree
1 tsp vanilla extract
1 tbsp sweetener (same choice as above)
ΒΎ tsp ground cinnamon
ΒΌ tsp salt
Instructions
Prepare the filling.
In a small bowl, whisk together cream cheese, pumpkin puree, sweetener, and pumpkin pie spice until smooth and creamy. Set aside.
Assemble βsandwiches.β
Trim the crusts off each bread slice if desired. Take half the slices and spread a generous layer of pumpkin-cream cheese on each. Then top with the remaining slices, forming 3 sandwiches. Cut each sandwich into a 3 Γ 3 grid (yielding 9 bite-sized squares per sandwich).
Make the French toast batter.
In a shallow bowl, whisk milk, egg, pumpkin puree, vanilla, sweetener, cinnamon, and salt until fully combined.
Cook the bites.
Preheat a nonstick skillet or griddle over medium heat; lightly grease if needed. Dip each bite into the batter, coating all sides, then place in the hot skillet. Cook 2β3 minutes per side (or until golden and cooked through).
Serve.
Transfer to a plate. Optionally drizzle with maple syrup or dust with powdered sugar before serving.
