🌶️ Spiced Chickpea Curry Soup
Ingredients:
1 tbsp oil
1 onion, chopped
2 garlic cloves, minced
1 tbsp ginger, grated
1 can chickpeas, drained
1 can coconut milk
1 cup vegetable broth
1 tsp curry powder
1/2 tsp turmeric
Salt & pepper to taste
Fresh cilantro for garnish
Crushed chili flakes (optional)
Instructions:
Sauté onion, garlic, and ginger in oil until soft.
Add chickpeas, curry powder, turmeric; stir well.
Pour in coconut milk and broth. Simmer 15 mins.
Season with salt and pepper.
Garnish with cilantro and chili flakes.
Serve hot with naan or bread.
