Soft Christmas Cookies
Ingredients:
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sour cream
For the icing:
- 2 cups powdered sugar
- 2-3 tablespoons milk
- 1 teaspoon vanilla extract
- Food coloring (red and green for holiday colors)
- Festive sprinkles
Directions:
1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
3. Beat in the eggs one at a time, then add the vanilla extract and mix well.
4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
5. Gradually add the dry ingredients to the wet mixture, alternating with the sour cream, beginning and ending with the dry ingredients. Mix until just combined.
6. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
7. Bake for 10-12 minutes, or until the edges are lightly golden and the cookies are soft.
8. Remove from oven and allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
9. For the icing, whisk together powdered sugar, milk, and vanilla extract until smooth. Divide into bowls and tint with red and green food coloring as desired.
10. Decorate the cooled cookies with icing and festive sprinkles. Allow icing to set before serving.
