Creamy Sausage and Mushroom Tortellini Soup
Ingredients:
1 lb Italian sausage, crumbled
8 oz mushrooms, sliced
4 cups chicken broth
1 cup heavy cream
1 package (about 9 oz) refrigerated cheese tortellini
2 cups fresh spinach, chopped
1 small onion, diced
2 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper to taste
Grated Parmesan cheese for serving
Instructions:
In a large pot, heat olive oil over medium heat. Sauté onion and garlic until fragrant.
Add crumbled sausage and cook until browned.
Stir in mushrooms and cook until tender.
Pour in chicken broth and bring to a simmer.
Add tortellini and cook according to package instructions (usually 3-5 minutes).
Stir in heavy cream and chopped spinach; cook until spinach wilts.
Season with salt and pepper.
Serve hot with grated Parmesan cheese on top.
