Ingredients:
For the Crust:
1 Β½ cups graham cracker crumbs
ΒΌ cup granulated sugar
6 tbsp unsalted butter, melted
For the Cheesecake Layer:
16 oz cream cheese, softened
ΒΎ cup granulated sugar
2 large eggs
2 tbsp lime juice
1 tbsp lime zest
1 tsp vanilla extract
For the Lime Mousse Layer:
1 cup heavy whipping cream
ΒΌ cup powdered sugar
Β½ cup sweetened condensed milk
ΒΌ cup lime juice
1 tbsp lime zest
Green food coloring (optional)
For Garnish:
Whipped cream
Lime slices or zest
Instructions:
1. Preheat the Oven: Preheat your oven to 350Β°F (175Β°C). Grease a 9-inch springform pan and set aside.
2. Prepare the Crust:
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.
Press the mixture into the bottom of the springform pan, forming an even layer.
Bake the crust for 8-10 minutes, or until golden and firm. Set aside to cool.
3. Make the Cheesecake Layer:
In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
Add the eggs one at a time, mixing well after each addition.
Stir in the lime juice, lime zest, and vanilla extract until fully combined.
Pour the cheesecake mixture over the cooled crust, spreading it evenly.
Bake the cheesecake for 35-40 minutes, or until the center is set. Allow it to cool completely, then refrigerate for at least 2 hours.
4. Prepare the Lime Mousse:
In a large bowl, whip the heavy cream and powdered sugar together until stiff peaks form.
In a separate bowl, whisk together the sweetened condensed milk, lime juice, and lime zest.
Gently fold the lime mixture into the whipped cream until smooth and fluffy. Add a few drops of green food coloring if desired for a more vibrant look.
5. Assemble the Cheesecake:
Once the cheesecake layer has chilled, spread the lime mousse evenly over the top.
Refrigerate the assembled cheesecake for at least 1 hour before serving.
6. Garnish and Serve:
Just before serving, garnish with whipped cream and lime slices or zest for a refreshing, decorative touch.
