Honey Garlic Pork Chops with Mashed Potatoes
Ingredients:
For the Pork Chops:
4 bone-in or boneless pork chops
2 tablespoons olive oil
3 tablespoons honey
3 cloves garlic, minced
1 tablespoon soy sauce
1 teaspoon Dijon mustard
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon unsalted butter
For the Mashed Potatoes:
2 lbs potatoes (Yukon Gold or Russet), peeled and cubed
4 tablespoons unsalted butter
1/2 cup whole milk (or heavy cream)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder (optional)
Directions:
Prepare the Mashed Potatoes:
Boil the potatoes in salted water for 15-20 minutes, until fork-tender.
Drain and mash with butter, warm milk, salt, black pepper, and garlic powder (if using). Set aside and keep warm.
Cook the Pork Chops:
Season pork chops with salt, black pepper, smoked paprika, and a drizzle of olive oil.
Heat a large skillet over medium-high heat and add the remaining olive oil. Sear the pork chops for 3-4 minutes per side until golden brown. Remove from the pan and set aside.
Make the Honey Garlic Sauce:
In the same pan, add butter and minced garlic, sautéing for about 30 seconds until fragrant.
Stir in honey, soy sauce, and Dijon mustard. Let simmer for 1-2 minutes until slightly thickened.
Combine:
Return the pork chops to the pan, coating them in the honey garlic sauce. Let cook for another 2-3 minutes, ensuring they are cooked through (145°F internal temperature).
Serve hot over mashed potatoes, drizzling any extra sauce over the top.
