Probably not the most organized bowl of the bunch but it sure was a delicious one! I cleaned the leftovers out the fridge and threw together this bowl of goodness!
Leftover salmon 🐟, garlicky roasted potatoes 🥔, crispy chickpeas, pre-made hard boiled egg 🥚, half a ripe avocado 🥑, cherry tomatoes 🍅 and olives over romaine lettuce 🥬 drizzled with an easy homemade lemon 🍋 Dijon dressing. I was only able to eat half but it was all good!
To make the dressing in a small mason jar combine:
- 2 tablespoons extra virgin olive oil.
- 2 tablespoons fresh lemon juice.
- splash of red wine vinegar.
- 1 tablespoon creamy Dijon mustard.
- 1 teaspoon minced shallots.
- 1/2 teaspoon minced garlic.
- 1/2 teaspoon salt.
- 1/2 teaspoon pepper.
Cover tightly with lid and shake well until creamy and combined. Drizzle the dressing generously on top of salad and enjoy.
