Golden Fried Pineapple Rings with Crunchy Coconut Coating
Ingredients:
1 fresh pineapple, peeled, cored, and sliced into rings
1/2 cup all-purpose flour
2 large eggs
1 tablespoon milk
1 cup shredded sweetened coconut
1/2 cup panko breadcrumbs
1/4 teaspoon cinnamon
1/4 teaspoon salt
Vegetable oil, for frying
Directions:
In a shallow bowl, add the flour and set aside.
In another bowl, whisk the eggs with milk.
In a third bowl, combine shredded coconut, panko breadcrumbs, cinnamon, and salt.
Dip each pineapple ring into the flour, shaking off the excess.
Next, dip it into the egg mixture, then coat it with the coconut mixture, pressing to adhere.
Heat 1 inch of vegetable oil in a deep skillet over medium-high heat until hot (about 350°F/175°C).
Fry pineapple rings in batches for 1–2 minutes per side, or until golden brown and crispy.
Remove with a slotted spoon and drain on paper towels. Serve warm on their own or with vanilla ice cream for an extra indulgence.
