Protein & Veggie Power Bowl 🥗🥔🥚
Ingredients:
2 boiled eggs, halved 🥚
1 cup cooked potatoes, cubed and seasoned 🥔
1/2 cup green beans or snap peas, steamed or blanched 🟢
1/2 cup cherry tomatoes, halved 🍅
1/4 cup black beans 🫘
1/4 cup green olives 🫒
Fresh lettuce leaves as a base 🥬
Salt, pepper, and olive oil to taste 🧂🫒
Instructions:
Boil the eggs, peel, and slice in half.
Boil or steam potatoes until tender, then season with a little olive oil, salt, and pepper.
Blanch or steam green beans or snap peas lightly.
Arrange lettuce at the bottom of your bowl.
Top with the eggs, potatoes, green beans, cherry tomatoes, black beans, and olives.
Drizzle with olive oil and season to your taste.
