Healthy and Delicious: Spiced Chicken & Fresh Garden Salad
Ingredients:
1 chicken breast (~6 oz), cut into chunks
1 tbsp olive oil
1/2 tsp paprika
1/2 tsp garlic powder
1/4 tsp cumin
Salt & pepper to taste
1 cup chopped romaine or green leaf lettuce
1/4 cup diced cucumber
1/4 cup chopped tomato
1/4 cup diced bell pepper (optional)
1 tsp lemon juice or vinegar (for salad)
1 tsp olive oil (for salad)
Directions:
1. Season & Cook the Chicken: Toss chicken pieces with olive oil, paprika, garlic powder, cumin, salt, and pepper. Sear in a hot skillet for 7–9 minutes, turning occasionally until fully cooked and golden.
2. Chop the Veggies: Dice tomato, cucumber, and any additional veggies. Combine with chopped lettuce in a bowl.
3. Dress the Salad: Drizzle olive oil and lemon juice or vinegar over the veggies. Toss well to coat lightly.
4. Assemble the Bowl: Serve the chicken warm over the salad, or side-by-side for a fresh, protein-packed meal.
5. Optional Add-ons: Add a sprinkle of feta, a spoonful of hummus, or sliced avocado for extra flavor!
