Creamy Tuscan Shrimp with Spinach
Ingredients:
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1/4 teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper to taste
1/4 cup chopped fresh basil, for garnish (optional)
Crusty bread, for serving (optional)
Instructions:
1. Pat the shrimp dry with paper towels. Season generously with salt and pepper.
2. Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove the shrimp from the skillet and set aside.
3. Add the onion to the skillet and cook for 2-3 minutes, or until softened. Add the garlic and cook for 1 minute more, or until fragrant.
4. Stir in the diced tomatoes (undrained), spinach, heavy cream, Parmesan cheese, and red pepper flakes (if using). Bring to a simmer and cook for 5 minutes, or until the sauce has thickened slightly.
5. Add the cooked shrimp back to the skillet and stir to combine. Cook for 1-2 minutes, or until heated through.
6. Season with salt and pepper to taste.
7. Garnish with fresh basil (if using) and serve immediately with crusty bread, if desired.
