Fresh Pickled Cucumber Salad (Makes 2 Quarts)
Ingredients:

6 cups thinly sliced cucumbers (about 4 medium)

1 cup thinly sliced onion

2 tbsp salt

2 cups sugar

1 cup white vinegar

½ tsp celery seed

½ tsp mustard seed

Directions: In a large bowl, toss cucumbers and onions with salt. Let sit for 1 hour, then drain well. In a medium saucepan, combine sugar, vinegar, celery seed, and mustard seed. Heat over medium until sugar dissolves completely (do not boil). Remove from heat and let cool slightly. Pack cucumber mixture into clean jars or containers, and pour the liquid over the top to cover. Seal and refrigerate. Flavors deepen after a day or two. Stays fresh up to 2 months—if it lasts that long!
