TRIPLE LAYER CHOCOLATE CHEESECAKE
You Will Need (Crust):
1½ cups chocolate cookie crumbs
1/4 cup melted butter
2 tbsp sugar
MIDDLE LAYER (CHEESECAKE):
16 oz cream cheese (softened)
1/2 cup sugar
2 eggs
1 tsp vanilla extract
1/4 cup sour cream
TOP LAYER (GANACHE):
1/2 cup heavy cream
1/2 cup dark chocolate chips
Instructions:
1. Preheat oven to 325°F (160°C). Mix crust ingredients and press into a springform pan. Bake for 8 minutes.
2. Beat cream cheese and sugar. Add eggs one at a time, then vanilla and sour cream.
3. Pour over crust. Bake for 40–45 minutes. Cool, then chill 4+ hours.
4. Heat cream, pour over chocolate, stir until smooth. Pour ganache over chilled cheesecake and let it drip down the sides.
5. Chill 30 minutes before slicing.
