Herb Butter Beef Tenderloin Roast

**Ingredients:
*For the Beef Tenderloin:
- 3–4 lb beef tenderloin roast
- 2 tbsp olive oil
- Salt & freshly ground black pepper, to taste

*For the Herb Butter:
- ½ cup (1 stick) unsalted butter, softened
- 3 cloves garlic, minced
- 2 tbsp fresh thyme leaves
- 2 tbsp fresh rosemary, chopped
- 1 tbsp fresh parsley, chopped
- 1 tsp Dijon mustard

**Directions:
1. Preheat oven to 425°F (220°C).
2. Pat the beef tenderloin dry and rub all over with olive oil, salt, and pepper.
3. In a bowl, combine softened butter, garlic, thyme, rosemary, parsley, and Dijon mustard.
4. Coat the roast evenly with the herb butter mixture.
5. Sear the beef in a hot skillet over medium-high heat, 2–3 minutes per side until browned.
6. Transfer to a roasting pan and place in the oven.
7. Roast for 25–35 minutes, or until the internal temperature reaches:
- 125°F (rare)
- 130°F (medium-rare)
- 135°F (medium)
8. Remove from oven and let rest for 10–15 minutes before slicing.

**Serving suggestion: Pairs well with roasted potatoes, asparagus, or a fresh salad.
