Satisfying Crustless Quiche with Bacon and Mushrooms
Ingredients:
6 large eggs
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup cooked bacon, crumbled
1/2 cup sliced mushrooms (button or cremini)
1/2 cup chopped spinach (optional)
1/4 cup onion, finely chopped
Salt and pepper to taste
1 tbsp olive oil or butter (for sautéing)
Directions:
Preheat your oven to 375°F (190°C).
In a skillet, heat olive oil or butter over medium heat. Sauté the onions and mushrooms for 5-7 minutes until softened and golden.
Add the spinach (if using) and cook for another 2-3 minutes until wilted. Set aside to cool.
In a large bowl, whisk the eggs and heavy cream together. Stir in the crumbled bacon, shredded cheddar, and sautéed veggies.
Season with salt and pepper.
Pour the mixture into a greased pie dish or quiche pan.
Bake for 35-40 minutes, or until the quiche is set and golden brown on top.
