Savory Steak Gorgonzola Alfredo with Creamy Parmesan Sauce 🥩🧀🍝
Ingredients:
1 lb (450g) steak (such as sirloin or ribeye), cut into bite-sized pieces 🥩
12 oz (340g) fettuccine or your choice of pasta 🍝
2 tbsp olive oil 🫒
4 cloves garlic, minced 🧄
1 cup heavy cream 🥛
1 cup grated Parmesan cheese 🧀
1/2 cup Gorgonzola cheese, crumbled 🧀
1/4 cup beef broth 🥣
2 tbsp unsalted butter 🧈
Salt and pepper, to taste 🧂
1/2 tsp crushed red pepper flakes (optional) 🌶️
1/4 cup fresh spinach, chopped 🌿
1/4 cup fresh basil, chopped 🌿
Balsamic glaze, for drizzling (optional) 🍷
Fresh parsley, chopped, for garnish 🌿
Instructions:
1. Cook the Pasta:
Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
2. Sear the Steak:
Season the steak pieces with salt and pepper.
Heat 1 tbsp of olive oil in a large skillet over medium-high heat.
Add the steak and sear for 2-3 minutes on each side until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.
3. Make the Creamy Parmesan Sauce:
In the same skillet, add the remaining 1 tbsp of olive oil and 2 tbsp of butter. Add the minced garlic and sauté for 1-2 minutes until fragrant.
Pour in the beef broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
Stir in the heavy cream and bring to a gentle simmer. Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy.
Add the crumbled Gorgonzola cheese and stir until it melts into the sauce.
Season with salt, pepper, and crushed red pepper flakes (if using). Add the chopped spinach and basil, stirring until they wilt slightly.
4. Combine and Serve:
Add the cooked fettuccine to the skillet, tossing to coat the pasta evenly in the creamy sauce. If the sauce is too thick, add some of the reserved pasta water to achieve the desired consistency.
Return the seared steak to the skillet, gently tossing to combine everything.
5. Garnish and Enjoy:
Transfer the pasta and steak to serving plates.
Drizzle with balsamic glaze for a touch of sweetness (optional).
Garnish with fresh parsley and more crumbled Gorgonzola if desired.
