Mutton Curry 😍😋
Mutton curry is a rich and hearty dish made with tender mutton pieces simmered in a spiced gravy. Here's a simple recipe to prepare it at home.

Ingredients
For the Mutton:
500g mutton (goat or lamb, bone-in or boneless, cleaned and cut into pieces)
2 tablespoons plain yogurt
1 tablespoon ginger-garlic paste
1 teaspoon turmeric powder
Salt to taste
For the Curry:
3 tablespoons oil or ghee
2 medium onions (finely chopped)
2 medium tomatoes (pureed or finely chopped)
3-4 green chilies (slit lengthwise)
1 teaspoon cumin seeds
2-3 green cardamom pods
1 bay leaf
1 cinnamon stick
4-5 cloves
1 teaspoon turmeric powder
1 teaspoon red chili powder
2 teaspoons coriander powder
1 teaspoon garam masala powder
1/2 teaspoon cumin powder
2 cups water (adjust based on desired consistency)
Fresh cilantro (chopped, for garnish)

Instructions
Marinate the Mutton
In a bowl, mix the mutton with yogurt, ginger-garlic paste, turmeric powder, and salt.
Cover and let it marinate for at least 30 minutes to 1 hour (overnight for better results).
Cook the Mutton
Heat 1 tablespoon of oil or ghee in a pressure cooker or a heavy-bottomed pot.
Add the marinated mutton and sauté for 5-7 minutes on medium heat.
Remove the mutton and set it aside.
Prepare the Base
Heat the remaining oil or ghee in the same pot.
Add cumin seeds, cardamom pods, bay leaf, cinnamon, and cloves. Sauté until aromatic.
Add the chopped onions and cook until golden brown.
Stir in the ginger-garlic paste and sauté until the raw aroma disappears.
Add Tomatoes and Spices
Add the tomato puree and cook until the oil starts to separate.
Mix in turmeric powder, red chili powder, coriander powder, and cumin powder. Stir well.
Cook the Mutton in the Curry
Add the mutton back into the pot along with the juices.
Mix well to coat the mutton with the masala.
