20 oz can crushed pineapple (with juice)
1 cup miniature marshmallows
1/2 cup chopped nuts (your favorite)
8 oz container Cool Whip, thawed (I used lite)
Instructions:
Combine Ingredients:
Combine pudding mix, pineapple (with juice), marshmallows, and nuts in a large bowl.
Mix well.
Fold in Cool Whip:
Blend in Cool Whip.
Chill:
Chill until ready to serve.
Tips and Variations:
Pudding Mix:
While pistachio is traditional, you can experiment with other flavors like vanilla, coconut, or even cheesecake.
Pineapple:
Do not drain the pineapple; the juice adds moisture and flavor.
You can use tidbits or chunks of pineapple instead of crushed.
Marshmallows:
Miniature marshmallows are preferred, but you can use larger ones if that's what you have.
Colorful mini marshmallows add a fun visual touch.
Nuts:
Pecans or walnuts are popular choices, but you can use any nuts you like.
Toasted nuts add extra flavor.
Cool Whip:
Ensure the Cool Whip is fully thawed before folding it into the mixture.
You can use regular or sugar-free Cool Whip.
Real whipped cream can be used in place of cool whip, but it will not hold its shape as well, and is best served soon after combining.
Additions:
Add maraschino cherries for a festive touch.
Shredded coconut adds a tropical flavor.
A splash of amaretto or other liqueur can add a sophisticated touch.
Texture:
For a smoother texture, you can pulse the nuts in a food processor, before adding them to the salad.
Chill Time:
Allow the salad to chill for at least an hour to allow the flavors to meld.
Serving:
Serve chilled.
This salad is often served as a side dish or dessert.
Storage:
Store leftovers in an airtight container in the refrigerator.
