Vegan Artisan Pizza with Mushrooms and Truffle Zucchini
Ingredients:
For the pizza crust:
- 1 pre-made pizza dough or 12-inch crust of choice
For the toppings:
- 1/2 cup pizza sauce
- 1/2 cup vegan mozzarella or cashew cream
- 1 medium zucchini, thinly sliced
- 1 cup mushrooms, sliced
- 1 teaspoon truffle oil
- 1 teaspoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
Directions:
1. Preheat your oven to 475°F (245°C) and prepare a pizza stone or baking sheet.
2. Roll out the pizza dough on a floured surface and transfer it to the prepared stone or sheet.
3. Spread the pizza sauce evenly over the crust. Add a layer of vegan mozzarella or cashew cream.
4. Toss the zucchini and mushrooms with olive oil, truffle oil, garlic powder, thyme, salt, and pepper. Arrange the mixture evenly over the pizza.
5. Bake for 12-15 minutes or until the crust is golden and the toppings are cooked. Remove from the oven and let cool slightly before slicing.
6. Drizzle with additional truffle oil if desired and serve warm.
