Warming Ginger Miso Soup with Tangle of Noodles

Ingredients:
- 4 cups vegetable broth
- 2 tablespoons white miso paste
- 1-inch piece of ginger, grated
- 2 garlic cloves, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 200g ramen or udon noodles
- 1 cup spinach leaves
- 1/2 cup shredded carrots
- 1/2 cup sliced shiitake mushrooms
- 2 green onions, sliced
- Sesame seeds and chili oil for garnish

Directions:
1. In a pot, heat sesame oil and sauté garlic and ginger until aromatic.
2. Add vegetable broth and soy sauce. Bring to a gentle boil.
3. Lower the heat and whisk in the miso paste until dissolved. Do not boil the miso paste to preserve its flavor.
4. Cook the noodles separately as per package instructions and set aside.
5. Add shiitake mushrooms, spinach, and carrots to the broth. Simmer for 5 minutes.
6. Divide noodles into serving bowls. Pour the broth and vegetables over the noodles.
7. Garnish with green onions, sesame seeds, and a drizzle of chili oil if desired.
