Crockpot French Dip Sandwich
Ingredients:
3-4 lb chuck roast
1 tablespoon olive oil
1 large onion, sliced
3 cloves garlic, minced
3 cups beef broth
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and black pepper to taste
6 French rolls or hoagie buns
6 slices provolone cheese
Optional: fresh parsley for garnish
Directions:
Heat olive oil in a large skillet over medium-high heat. Season the chuck roast with salt and pepper, then sear on all sides until browned (about 4-5 minutes per side).
Place the sliced onion and garlic in the bottom of your crockpot. Lay the seared roast on top.
Pour in beef broth, Worcestershire sauce, soy sauce, and sprinkle with thyme and rosemary.
Cover and cook on low for 8 hours, or until the meat is tender and can be shredded easily.
Remove the roast from the slow cooker, shred the meat using two forks, and return it to the juices in the crockpot.
Preheat oven to broil. Slice rolls open, fill with shredded beef, and top each with a slice of provolone cheese.
Place sandwiches under the broiler until the cheese is melted and bubbly (1-2 minutes).
Serve warm with a small bowl of the au jus (cooking liquid) for dipping.
