Baked Spinach Mushroom Quesadillas 🥬🍄
Ingredients:
2 cups fresh spinach
1 cup mushrooms, sliced
1 cup shredded mozzarella cheese
4 flour tortillas
2 tbsp olive oil
1/2 tsp garlic powder
Salt and pepper, to taste
Instructions:
Sauté the Filling:
Heat olive oil in a skillet over medium heat. Add mushrooms and cook until softened. Toss in spinach, cooking until wilted. Sprinkle with garlic powder, salt, and pepper. Set aside.
Assemble Quesadillas:
Place a tortilla on a baking sheet. Spread a layer of the spinach-mushroom mixture on one half of the tortilla. Top with shredded mozzarella. Fold the tortilla in half.
Bake the Quesadillas:
Preheat your oven to 375°F (190°C). Brush the tops of the quesadillas with a little olive oil. Bake for 8–10 minutes, flipping halfway through, until golden and crispy.
Serve and Enjoy:
