🍋 Lemon Ricotta Pasta with Spinach 🍋
A bright, creamy pasta dish bursting with fresh flavors! This easy recipe brings together zesty lemon, creamy ricotta, and tender spinach for a delightful meal.
Ingredients:
8 oz fettuccine or pasta of choice
1 cup ricotta cheese
Zest of 1 lemon
Juice of 1/2 lemon
1/2 cup grated Parmesan cheese
2 cups fresh spinach
1 tbsp olive oil
Salt and pepper, to taste
Lemon slices, for garnish (optional)
Directions:
Cook Pasta: In a large pot of salted boiling water, cook pasta according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
Prepare Ricotta Mixture: In a mixing bowl, combine ricotta, lemon zest, lemon juice, and Parmesan. Mix until smooth and creamy. Season with salt and pepper.
Cook Spinach: In a large skillet, heat olive oil over medium heat. Add spinach and cook until wilted, about 2 minutes.
Combine: Add the cooked pasta and ricotta mixture to the skillet with spinach. Toss to coat, adding pasta water as needed to reach desired creaminess.
