Ingredients:
• 2 lbs beef chuck, cut into bite-sized pieces
Salt & pepper to taste
• 3 tbsp olive oil
• 1 large onion, chopped
• 3 garlic cloves, minced
• 3 tbsp tomato paste
• 1/4 cup all-purpose flour
• 4 cups beef broth
• 1 cup red wine (optional but recommended)
• 4 large carrots, sliced
• 3-4 Yukon gold potatoes, cubed
• 2 bay leaves
• 1 tsp dried thyme
• Fresh parsley for garnish

Directions:
1. Sear the Beef: Season beef with salt and pepper. In a large pot or Dutch oven, heat oil over medium-high. Sear the beef in batches until browned. Set aside.
2. Build Flavor: In the same pot, sauté onion until soft. Add garlic and tomato paste, cook 1 min. Stir in flour and cook another minute.
3. Simmer: Pour in beef broth and wine, scraping up the browned bits. Return beef to the pot, add herbs, and bring to a simmer.
4. Add Veggies: Stir in carrots and potatoes. Cover and cook on low heat for 2 to 2.5 hours, until beef is fall-apart tender.
5. Finish & Serve: Remove bay leaves, adjust seasoning, and garnish with fresh parsley.
