Cajun Chicken Sloppy Joes
Ingredients:
1 lb ground chicken
1 tablespoon olive oil
1 small onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
1 tablespoon Cajun seasoning
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional, for heat)
1 tablespoon tomato paste
3/4 cup tomato sauce
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
Salt and black pepper, to taste
4 hamburger buns, toasted
Optional toppings: pickles, coleslaw, shredded cheese, sliced jalapeños
Directions:
Heat olive oil in a skillet over medium heat. Add onion and bell pepper and sauté for 3–4 minutes until softened.
Add garlic and cook for another 30 seconds until fragrant.
Add ground chicken, breaking it up with a spoon, and cook until browned and fully cooked through, about 6–8 minutes.
Stir in Cajun seasoning, smoked paprika, and cayenne (if using). Mix in tomato paste and cook for 1 minute.
Add tomato sauce, Worcestershire sauce, and brown sugar. Simmer for 5–7 minutes, stirring occasionally, until thickened. Season with salt and pepper to taste.
Spoon the Cajun chicken mixture onto toasted buns. Add desired toppings and serve hot.
